This one is an expansion of the classic scrambled eggs with some fresh ingredients added in to for great flavour and good variety. I love this one when I am craving something a little salty, as the feta and salt combo hit that spot.
I like to get the avocado, tomato and feta cut up and ready to go before I put the toast and eggs on. This is so that as soon as the toast is done, I can get the avo spread, tomatoes put on, and feta sprinkled on top. The scrambled eggs, still warm, are then put on and topped off with salt and pepper. This cafe inspired creation is best enjoyed with a knife and fork.
